Objectives	To update the professional skills of technicians ensuring qualified assistance in their own countries, either to breeders or to transformation industries in order to improve the dairy production having an eye to quality rather than quantity. To manage production process, quality, food safety and increase the value of dairy products
Program	The Course will be addressed to 12 participants from Algeria, Tunisia and Morocco (four participants from each country).The Course is completely free and will be organized and financed by the Italian Institute for Foreign Trade in close cooperation with Cremona Province within the "Mediterranean Project".The Training will be held in Cremona from 18 to 30 October 2004 and will be articulated in two different phases: 1) Theoretical course dedicated to technical lectures related to milk transformation and production matters (as anatomy of mammary gland, hygiene in milking room, preservation techniques in cowshed, chemical and microbiological composition of milk, qualitative and quantitative improvement of milk through food and hygienic techniques ) . The lessons will be held in English by experts having acquired a direct practical experience 2) Study tour dedicated to visits to production companies, specialised schools and institutes which analyses and check milk and visit to the International Dairy Cattle Fair.
Participants	The Course is addressed to dairy sector managers and technicians, with experience and professionality.Good knowledge of English is required.
